Peach Cobbler Recipe With An Unusual Ingredient

Do you love to eat, but prefer to keep it simple? If so, you’ll love the easy peach cobbler recipe my friend Jen from JENerally Informed is sharing today as part of the Spectacular Summer Blog Hop! I grew up eating fruits and veggies from a can pretty much every day, but now it’s rare for us to keep any in the pantry. Maybe way back then (oh hey, 1980’s) stores didn’t offer the variety of affordable fresh fruits that they do now.

While I enjoy fresh peaches, I’ll always have a soft spot for canned peaches and the peach cobbler my grandma used to make. Jen’s version has only three ingredients – and one of them is not what I expected! It’s a simple dessert to make at home or on a summer camping trip since the ingredients are super portable. No bruised peaches here!

What is your favorite summer memory?

My birthday is on the 3rd of July, so as a young girl I always believed that the fireworks for an extended part of my birthday festivities. I still love all of the fun and hoopla that is wrapped up in the summer months and as a parent I want my children to experience those same carefree days and months like I did.

What is your favorite family vacation?

One that does not involve traveling in a car anywhere with carsick children under the age of 4 or surly teenagers, so yeah that kind of limits the list, but…. We just recently traveled to San Diego. The weather was lovely. No one threw up in the car and the teens weren’t surly, so it was my favorite trip so far. Plus we were on a beach. Any vacation that involves large bodies of water gets added to the favorites list.

    I remember the first time my husband made this and thinking that this was one strange recipe. Soda and a cake mix? It actually tastes soooo good. One bite and I was hooked. That might have been the one thing that kept me on the first camping trip 🙂
